XO Chilli Cheese Toast

For the ultimate cheese toastie. Anytime of the day!


Tips

  • Grate the Cheese: Avoid pre-sliced or pre-shredded cheese. Grating your own ensures it melts faster, preventing the bread from burning before the inside is gooey.

  • Medium-Low Heat: Low and slow is key. This allows the cheese to melt fully without burning the bread.

  • Butter Both Sides of the bread: For extra indulgence, butter the outside and lightly butter the inside of the bread. Yes both sides!


Ingredients

  • 1 slice of good-quality white bloomer or sourdough.

  • 50g-100g of medium or mature cheddar


Method

  • Lightly toast the slice of bread under the grill (medium heat) or in a toaster

  • Lay the toast on a baking tray. Cover the slice of bread fully with grated cheese, making sure the edges are completely covered to prevent the edges from burning (it may look like it is piled high, but it will melt down).

  • Grill until the cheese is bubbly and deep golden brown, around 2 to 4 minutes.

  • Remove from the grill and drizzle a generous spoon of XO chilli oil on top for that umami flavour bomb and enjoy.
