XO Chilli Oil Fried Rice

Tips
Use day old rice: Avoid using freshly cooked rice if possible - the steam from cooking makes the rice clump together and prevents the individual grains from being coated in the flavours of the ingredients
HIGH Heat: "Wok Hei" is the indescribable background heat that good fried rice has - that comes from the jet engine sized burners in Chinese restaurants. So crank it up!
Keep it quick: Fried rice is not meant to be cooked for too long - so don't make too much at one time
Ingredients
2-3 bowls of cooked rice, ideally cold and cooked the night before
Previously cooked protein (chicken, bacon bits are all good choices)
Your choice of vegetables (diced into small cubes)
2 eggs, beaten
Shum Like It Hot XO Chilli Oil
Method
Heat wok on high until it's smoking
Add 2 tablespoons of oil
If you're using carrots and other harder vegetables, throw these in and cook for a couple of minutes, and then remove, and reheat the wok
Add oil and then add the eggs, cook until about 70% done
Add the rice and combine with the egg
Put vegetables back in the wok and mix together
Add the protein
Add a teaspoon (or more if you like the heat) of Shum Like It Hot's XO Chilli Oil and enjoy!
